Anyone else feel just a little bit relieved when you’re husband’s favorite football team isn’t playing in the Superbowl? Don’t get me wrong, I always hope for the Seahawks to win every week and make it to the big game but the couple of times they have made it, my husband has literally been a WRECK for at least a week before the game. Like, stressed out, reading every article, re-watching old games, can’t sleep the night before, WRECK. Please tell me I’m not the only one here!! So, while I wish the Seahawks would have a killer year every year and make it to the Superbowl, I’m not made about the lack of stress in my house 🙂

Plus, it makes the game more about the food, which is always my favorite part anyway! And these crispy baked buffalo chicken wings, you guys!!! They are gonna kick your Superbowl party up a notch, or two! Promise!!

A few of my favorite things about these wings…
1) They have perfectly crispy skin but it’s no thanks the frying because there is no oil and no deep frying these bad boys.
2) The buffalo sauce is totally bearable. I better state that I’m a bit of a wuss in the hot sauce department. But when dipped in ranch or blue cheese dressing, perfection!

Crispy Baked Buffalo Chicken Wings
For the wings:
4lb chicken wings, wingettes & drumettes
2 Tbsp baking powder
1 tsp salt
cooking spray
For the sauce:
4 Tbsp unsalted butter, melted
1/2 cup Frank’s Original Red Hot Sauce
1 Tbsp coconut sugar
1/4 tsp salt

1. Preheat the oven to 250°F. Put one oven rack in lower quarter of the oven and one in the top quarter. Lay the wings out on plates, foil or parchment paper and pat them dry on both sides with paper towels.
2. Place wings in Ziploc bag with baking powder and salt. Close bag and shake to coat the wings evenly.
3. Line a baking sheet with foil and place a rack sprayed with cooking spray on top of foil. Place the wings skin side up on the rack. Pack the wings in tight, mine were halfway off the edge and super snug in order to fit them all on the rack. This is ok because they will shrink during cook time. Bake wings on the lower shelf in the oven for 30 minutes.
4. Turn oven up to 425°F and move the baking sheet up to the higher rack. Bake for another 50 minutes, rotating the tray halfway through. While wings cook, whisk together hot sauce ingredients in a bowl. Keep warm or reheat prior to using.
5. When wings are done, place them in a large bowl and toss with hot sauce. Serve with Ranch or blue cheese dressing for dipping.
