What is it about having kids that makes you want to celebrate ALL the holidays? Am I alone in this? I have never ever been a fan of Halloween or Valentine’s Day, but I was ALL about a Halloween costume for the little guy a few months back and today I found myself wondering if I should make Valentine’s for Landon to give to a few people.

I mean…he’s 15 months old…of course I SHOULD NOT make Valentine’s for him to give out. Not to mention that I’d be the one giving them out! My pre-kid self it shaking her head at me right now 🙂

So, no cutesy little cards or conversation hearts…at least not this year. I did, however, decide to whip up some treats for the occasion. And let me tell you, I made them yesterday afternoon and they are already half gone. Oops!

Chocolate Covered Strawberries
1 lb strawberries
1 bag milk chocolate chips
1 bag white chocolate chips

 1. Place a cooling rack over a piece of parchment paper.
2. Put the milk chocolate and white chocolate chips into 2 separate microwave proof bowls. Melt the chocolates in the microwave at half power, for 1 minute, stir, and then heat for another minute until melted.
3. Hold a strawberry by the stem, dip the fruit into one of the melted chocolates, submerging it about 3/4 of the way. Lift out of the chocolate, letting any excess chocolate fall back into the bowl. Set the strawberry on the cooling rack. Repeat with the rest of the strawberries, dipping half of them in the milk chocolate and half in the white chocolate. Allow chocolate to harden for approximately 15 minutes.
4. Once the chocolate has hardened, line the milk chocolate strawberries up in a line and do the same with the white chocolate in another line (this will make the drizzling easier). Transfer the remaining chocolate in separate plastic sandwich bags with a spoon. Start with the strawberries dipped in milk chocolate and drizzle them with white chocolate. With the bag of melted white chocolate, push the chocolate to one corner of the bag, then snip a small corner off with scissors. Squeeze the bag gently and quickly drizzle the white chocolate over the berries, using a big, sweeping motion over the entire line. Do the same with the bag of milk chocolate over the white chocolate covered berries. Let the drizzle harden for approximately 15 minutes and serve, or store in the refrigerator up to 3 days.
