Miso Roasted Sweet Potatoes

Wow! It has been a minute since I posted anything on the blog!! I think May was my last post. I really can’t believe it’s been that long because the time has flown by over here. This was an intentional break. Back in May, hubby and I decided to get in touch with our realtor and think about putting the house on the  market. Well, thinking about it quickly turned into actually doing it and before I knew it, we had sold our house and moved! Since then, there hasn’t been a whole lot of DIY projects and cooking up new recipes, so not a whole lot to share but MAN! I am excited to get back into the swing of things.

We purchased a new home and we LOVE every part of it. We were thinking about going with a fixer upper but just weren’t finding anything that was exactly the layout we wanted. Mind you, when I say fixer upper, I mean “superficial” fixer upper. No knocking down walls or re-doing electrical wires for this lady! We were looking at 1990’s homes that just needed some surface updating. We found a couple but the ones we did like ended up selling quickly, before we were ready to make an offer. We randomly decided to check out a new development in our area, thinking it would for sure just be “so so”, basic builder grade home, and ended up walking into the floorplan of our dreams. A huge open-concept downstairs, great for entertaining, plenty of room to grow, a bonus room for hubby’s desperately-wanted mancave, and a good-sized flat backyard for our little guy to play.

Now, the home is builder-grade. All the materials had already been selected when we purchased it so we didn’t have a ton of input but there isn’t a hole lot we would have done differently. I am so excited to add my touch to it with paint, decorating and a few minor projects 😉 and I will happily take you along with me. For now, I’m still getting the last few boxes unpacked and with the holidays coming, we all know how the time flies. The next few weeks I will have holiday recipes for you and so easy holiday DIYs but stay tuned for decorating and bigger DIY projects galore come the new year.

Miso Roasted Sweet Potatoes

A little change from your basic scalloped potatoes or a drastic change from your Thanksgiving sweet potato casserole. These sweet potatoes are savory and pack a lot of flavor for so few ingredients thanks to the miso coating.

Prep Time 20 minutes
Cook Time 75 minutes

Instructions

  1. Preheat oven to 375F
  2. Scrub sweet potatoes clean, trim 1/2" off the ends, then use a mandoline slicer to thinly slice.
  3. Put sweet potato slices in a large bowl with white miso and toss to coat.
  4. Melt ghee or butter in the microwave and pour into the bottom of a cast iron skillet or oven proof pan
  5. Arrange potato slices in cast iron skillet vertically but at slight angle in circular pattern, filling the skillet completely.
  6. Sprinkle potatoes with black pepper, cover with foil and roast for 1 hour.
  7. Remove foil, increase heat to 425F and roast 15 minutes, or until edges begin to crisp.
  8. When done, remove skillet from the oven, sprinkle potatoes with fresh herbs and serve.

Recipe Notes

My mandoline slicer was set to the middle setting, slicing the potatoes about 1/8" thick.

When coating the potatoes with miso, I found it easier to do this step in batches, 1 sweet potato and 1/4 of the miso at a time.
